INGREDIENTS
Broccoli/cauliflower1 small
Oil 3 tbsp
Potatoes2 – 3
Onion 1 medium
Cheddar cheese 100 gm
Water2 cup
Fresh cream½ cup
Salt to taste
Black pepper powder¼ tsp
Chili powder a pinch
METHOD
Heat 3 tbsp oil in a wok, add 2 – 3 sliced potatoes, 1 chopped onion and 1 small broccoli or cauliflower. Sauté for 4 – 5 minutes.
Now add in 100 gm cheddar cheese and 2 cups of water.
Cover and cook on low flame for 15 – 20 minutes till all the vegetables are tender.
Now turn the flame off, put mixture in a blender, blend well till smooth.
Pour blended mixture again into the wok. Add in salt to taste, ¼ tsp black pepper powder, ½ cup fresh cream and a little chili powder.
Mix very well, cook on low flame till thicken.
Separately blanch the remaining broccoli/cauliflower.
Remove shorba in a serving bowl. Garnish with blanched broccoli. Serve hot.
